A little late but here is a great recipe for Chicken burgers. I have made them twice now... and they are messy to make, but delicious to eat! If anyone makes this and finds a way that they are not so messy... please inform me! :)
Ingredients
The white part of 1 leek - chopped
Onion chopped
2 carrots - grated
1 large zucchini - grated
2 boneless skinless chicken breast chopped
1 1/2 tablespoons of an oil of your choice
1 - 2 teaspoons of parsley flakes
s & p to taste
1 1/2 cups bread crumbs (I just put about 2 slices of bread in the food processor)
For the coating you'll need
Flour
3 eggs beaten
Seasoned bread crumbs (I did about 1 slice of bread and saltine crackers - then added spices)
Saute' the leek, onion, carrots, zucchini and oil for 3 mins or so. Then mix in a bowl with the remaining ingredients. Add half to the food processor and puree for a few seconds, take it out and add the other half. Make patties with floured hands. Then coat in flour, eggs, bread crumbs and saute in oil until golden about 6 mins each side!
These are sooooooo good - give them a shot even if you don't like all the veggies! ;)
