It seems like for the past month it has been on thing after another... first was my birthday, then Thanksgiving, Christmas, New Years, now moving. Eventually I know things will seem a little quieter that I may have the time and energy to make a few post during the day. But as for now... I am doing what I can.
Life is interesting these days .... I have a toddler... a very active talkative toddler... two dogs... moving and in the midst of all that I have been struggling for the past year with an on going health issue that at times can physically consume me. I do hope that 2011 brings a little peace (unless baby number two decides to come along), some organization and just time to play with my girl.
This week is actual move week. So I have not had the desire to cook a whole lot but have still managed to eat healthy meals. Here is a glimpse of what we have eatin and are going to eat this week.
Monday we had a Turkey (that I defrosted from Thanksgiving), mixed with Quinoa, peas, left over black beans, pureed spaghetti squash, raisins, and spices. It was surprisingly good for me just trying to clean out the fridge!
Tuesday we had chicken apple sausage, sauteed zucchini, sweet potato fries and a salad.
Wednesday we are having soup and sandwiches.
Thursday Tacos
Friday Chili
Saturday is move day so we are eating out!
I find this one of my daily struggles - putting good, healthy food into our bellies and NOT compromising on that. When I say struggle I mean, something I DAILY have to put a concious effort towards!
