Tonights Dinner W/ a new recipe

Tonight since I had no left overs ... I had to improvise!

I am making the crockpot chicken recipe I made previously... then I am making a Baked Acorn Squash w/ Mustard and Honey that I found in a cook book... here is the recipe ::
Ingredients ::
3 acorn squash
6 tablespoons butter
2 tablespoons Dijon mustard
6 tablespoons honey
Salt & Pepper to taste

Preheat oven to 375.  Set the squash on its side and cut vertically (works better if you cute the stems off first), Scrape out seeds and stringy stuff.  Place cavity side up in a large roasting pan.
Mix the butter, mustard, and honey in a small bowl until blended.  Fill each squash cavity w/ 2 tablespoons of butter mixture.  Season with S&P.  Back until squash is very tender - 1 - 1 1/2 hours.

I'll let you know how it turns out!!!

Make it organic!  I have slowly replaced my spices with organic spices... buy organic butter... organic veggies...  it feels good to know that I make a daily investment in my future! :)
