Deceptively Delicious Cookies

This afternoon between attempting to unpack and clean the truck and deal with a toddler that thinks talking for 1 1/2 hours in her bed is MUCH more fun than sleeping.... I made another recipe from the Deceptively Delicious Cookbook!

These cookies were thumb print cookies - and all though they did NOT turn out like the picture in the book they are delicious and one of the most simple recipes I have made in a while.  These had maple syrup for the sweetener, it called for barley flour but I had spelt, then ground almonds, oil, vanilla, ???  I know I am missing a few ingredients.  But you made the dough then dropped them on your cookie sheet - pressed your thumb in it and put some YUMMY jam in the middle!
