"Larabar" recipes

Ok - so my daughter and I LOVE LOVE LOVE Larabars  -  we love that they are natural - fruit - protein... and delicious... but unless you find a great deal, they are not in our budget.

So I have been searching to find some good recipes... and here you go - I am going to try some today!

Homemade Larabars

Larabars are awesome but kinda expensive, don’t you think? I tinkered in the kitchen tonight and came up with these “larabar-esque” creations. I can’t wait to try some more new flavors!

Almond Cookie
Makes 2-3 bars
  • 1/4 cup dates
  • 1/2 cup almonds
  • 1/8 teaspoon salt
  • 1/4 teaspoon vanilla
  • plastic wrap
Lay out three pieces of plastic wrap, each about the size of a half sheet of paper.
Combine all ingredients in food process and process for about 2 1/2 minutes.
Form the dough into bars and wrap each in a piece of plastic wrap. Store in the fridge – if they last that long ;)

Peanut Butter Oatmeal Cookie
Makes 2-3 bars
  • 1/2 cup dates
  • 1/4 cup cashews
  • 2 tablespoons peanut butter
  • 1/4 teaspoon cinnamon
  • 1/2 cup rolled oats
  • plastic wrap
Lay out three pieces of plastic wrap, each about the size of a half sheet of paper.
Combine all ingredients except the oats in the food processor. Process about 2 1/2 minutes.
Add in the oats and pulse 4-5 times.
Form the dough into bars and wrap each bar in a piece of plastic wrap. Store in the fridge.

Chocolate Coconut Pie
Makes 2 bars
  • 1/4 cup cashews
  • 1/4 cup dates
  • 12 oz dark chocolate (I used Green and Black’s 85%)
  • 4 tablespoons coconut
  • 1/8 teaspoons salt
  • 1/4 cup rolled oats
  • plastic wrap
Lay out three pieces of plastic wrap, each about the size of a half sheet of paper.
Combine all ingredients in the food processor. Process about 2 1/2 minutes.
Form the dough into bars and wrap each bar in a piece of plastic wrap. Store in the fridge.



-PB&J Homemade Lara Bar-
~Save your money people, this recipe is so much more better
Makes 1 medium-large bar:
  • 5 Dates
  • 10 peanuts
  • 7 cashews
  • 1 tbs of raisins
  • 1 tbs of dried cherries
  • 1/2 tbs of all natural creamy PB (*The secret ingredient* and we used Krema brand)
  • Pinch of sea salt
Directions:
> Put all ingredient into a food processor, and blend to a well mixed paste about 3-4 min
> Roll out flat in bar shape
>Freeze for about 3o min, then wrap up for later, or enjoy now


Clean Eating Cherry Pecan Lara Bars

(Makes 4 bars)
Ingredients
1/2 cup date – pitted
1/2 cup dried cherries – no sugar added
1 cup pecans
1/2 tsp. cinnamon
Directions
Step 1 – Place all ingredients in the processor, and blend until it becomes a ball like the one above.
Step 2 – Place on plastic wrap on a flat work surface.
Step 3 – Wrap plastic around the “dough”.
Step 4 – Roll and shape.
Step 5 – At this point, you can place the whole thing in the fridge for 24 hours. But I recommend the freezer. The dough is very sticky and soft, so a few hours in the freezer would do it some good.
You could also put a few extra nuts in the processor and roll your bars in the nuts as a last step to avoid getting your fingers sticky when you pick it up.
But ultimately, that’s it! And man, are they G.O.O.D.!
