Recipe Hunt - Readers Participation!

Ok folks!!!  I purchased some Boneless Pork chops from Wholefoods this weekend and I am on a hunt to find something really yummy. I am hoping to find a recipe that includes items in my pantry.  Also, one of my pet peeves I have had with pork in the past is that they are dry and chewy.  The chops I got were really thick - so tell me what you got!
